Open Question: How does someone like Bobby Flay own numerous restaurants?

Heres my plan. Help me merge these two business ideas?
I am going to own my own a chic, upscale pastry bistro that will run day to night, all year round, in downtown Chicago, where everyone can just sit back, enjoy extravagant desserts, pastries , and an upbeat, relaxing atmosphere. What’s the best part? I’m doing what I love the most, and I don’t have to call it a “job”.
During the busy months of the year( This is the part I need help on), customers will have the ability to meet one on one with me to discuss wedding cakes, and specialty cakes.
I love cakes, but I love pastry in general. How do I make the two function?
